How To Make Goan-Style Batata Bhaji And Puri For A Delicious Breakfast

Hot, crispy and decadent puri, served with a warm and flavourful bowl of aloo sabzi, this combination is enough to soothe our foodie souls. If you look around and explore, you will notice how immensely people love this combination in every part of India. While Bengalis adore luchi and sada aloo torkari, North Indians prefer bedmi puri and aloo rasedar. Goans are also huge fans of puris and aloo ki sabzi. Alongside cutlet pao, fish curry-rice and more, puri-sabzi is also one of the most popular combinations among the locals in Goa. If you’ve ever been to Goa, you’ve probably noticed that there are numerous cafes and street carts selling this popular combination in every nook and cranny. Not just breakfast, you can enjoy this treat at any time of day. It is, however, typically consumed for breakfast. Let’s learn how to make it in the comfort of our own homes.

What distinguishes the Goan version of puri sabzi from the rest is the use of spices in the recipe. This version of aloo ki sabzi is milder and gives the palate a subtle taste compared to the North Indian version, which is dominated by the strong flavours and aroma of fennel, ginger, and garam masala. It also has an incredible flavour and is calming and aromatic.

Start by washing and boiling the potatoes. Once done, cut them into bite-sized cubes.

Note: Make sure to keep 8-9 cubes for later use. Mash these cubes with the help of a fork and set them aside. This mash will help in making the gravy smooth.

Now, add curry leaves, cumin seeds, mustard seeds, heeng, and green chillies to a pan of heated oil. Allow them to splutter. Once done, add the cubed potatoes, garlic, and seasonings (salt, sugar, and turmeric powder), and stir well. Cook for 3 to 4 minutes.

After cooking, add the mashed potatoes and mix well. Ps: Do not mash the cubed potatoes. For the complete step-by-step Goan-style batata bhaji recipe, click here.
